Ricotta Gnocchi with Tomato Sauce and a Giveaway!

I sometimes think that I am the most forgetful person alive.  Seriously.  You tell me something, and I'll probably completely forget 10 minutes later.  And I think it's even worse when I'm pregnant.  So I feel a little silly - I was sent some coupons from the wonderful people at PrĂ©sident® and Precious® cheese to try some of their products - and they sent along some extras for one of you!  Every week, I planned on making something with one of their cheeses, and every week I would forget.  Well, I finally remembered - and now the coupons are about to expire!  So - this is going to be a quick turnaround giveaway - so I can get these out to one of you as soon as possible so that one of you will be able to try out these wonderful products!


This recipe is one of those that falls under "this is so easy you don't even need a recipe".  But this is a perfect recipe to have on hand for one of those nights when you have 15 minutes to get dinner on the table.  I know that December is a super busy month - so these kinds of recipes really come in handy right now!!


Ricotta Gnocchi with Tomato Sauce
adapted from The Skinny Cheese Cookbook


serves 4


1 pound gnocchi
1 cup tomato sauce - homemade or store bought
2 tablespoons olive oil
1 clove garlic, finely minced or grated
3 tablespoon Ricotta cheese
Fresh parsley, for serving


Bring a large pan of water to a boil.  Add the gnocchi and cook until it rises to the top of the water - 3 to 5 minutes.  Drain and set aside.


Heat the olive oil in a large saute pan.  Add the garlic and cook until fragrant.  Add in the tomato sauce and cook until warmed through, about 3 minutes.


Turn off the heat and stir in the ricotta cheese.  Add the gnocchi and stir to combine.


Serve with a sprinkling of fresh parsley.

  8. LOVE Feta cheese on pizza or spinach pie...not to mention any salad...leafy green or pasta! Ricotta is a must for lasagna and also tasty dolloped on pizza for a change of pace. You can also make Gnocchi with ricotta cheese instead of potatoes. YUMMY!!

    As for my favorite cheese dish...I honestly can't pick a favorite. I mean, it's CHEESE! It makes everything taste better!

  11. I know it sounds too easy, but it would have to be classic mac and cheese!!! There is just something about that dish that is so comforting. My mom's recipe is the best!

  13. Nothing better than baked ziti. Semolina pasta, real homemade gravy (no jarred stuff, thank you), mixed with tons of ricotta, and extra mozzarella on top. Has to be cooked well done so the edges get a little brown and some of the ziti is a little hard!!!

  18. oh wow! that gnocchi looks unreal... I am for sure making this soon. I tried to make homemade gnocchi and it failed... My favorite thing with cheese is a white pizza. It has ricotta and mozz with garlic and tomatoes. It is a jewel!

  19. Quite honestly I pretty much love anything with cheese. But my two favorites would be Honey Lime Chicken Enchiladas or Pizza (with Lasagna a close 3rd).

  20. I am suffering from a little pregnancy brain too- last night I found the block of parmesan cheese in the drawer where I keep the grater. Oops.

    As for my favorite dish with cheese... I don't know how I'd ever pick one. Just about everything I eat from pasta, soups, pizza, salads, snacks, breakfast, it all includes one kind of cheese or another!

  32. Pretty much anything with cheese is on my favorites list! But caramelized onions and kalamata olives on a log of chevre. Sooooo good. Or a white pizza (chevre, feta, mozzarella and blue cheese) with olives and tomatoes.

  41. I'm of the opinion that anything with cheese in it is good! But some of my favorites are Creamy Chicken Enchiladas, Homemade Mac & Cheese, and Ravioli with Alfredo sauce. Yummy!

  44. I love lemon ricotta pancakes for breakfast.
    Classic mac and cheese is also delicious. My favorite is a crock pot version I have.
    I made a mock greek salad with feta the other day that was wonderful as well.
